「beat」は「人やチームなど対戦相手がいる時に、その相手に対して勝つ場合」に使用し、「win」は「試合やギャンブルなどの出来事などにおいて勝つ場合」に使います「ベアーズがジャイアンツに勝った。」という場合は「The Bears beat the Giants.」
「ベアーズが試合に勝った。」という時は「The Bears won the game.」と「win」を使います。「試合（the game）」は対戦相手ではありませんので、ここでは「beat」は使いません。
”against”という前置詞を用いれば、”win”を用いても対戦相手に勝つことを表現できます。
「The Bears won against the Giants.」「ベアーズがジャイアンツに勝った。」
”beat”と”defeat”は対戦相手の個人やチームに勝つと言いたい場合に使うが、”defeat”の方が形式的かつ一般的な表現。

Which is more correct/better: "On a scale 'of' one to ten" or "On a scale 'from' one to ten" or are they both equally correct?

I think of makes some sense since it's a one-to-ten scale—i.e., the scale has the characteristic of displaying a measurement between one and ten. But saying it out loud as I write this, from comes more naturally.

The weather for our vacation was a perfect ten on a scale of one to ten.
